Peak Shaving and Solar Storage: Powering an Industrial Bakery on a Limited Grid Connection

Dumarey Green Power deployed a PowerSkid battery energy storage system (BESS) at a German industrial bakery to reduce peak electricity demand. The system performs peak shaving and stores solar energy, enabling the bakery to operate within a limited grid connection while lowering electricity costs and CO₂ emissions.

Customer Requirements

The Schuhbeck family from Ruhpolding has been producing baked goods for more than 60 years. The business began in 1953 when master baker Korbinian Schuhbeck and his wife Elisabeth opened a small bakery. Today the bakery continues to be operated by the family, with Elisabeth Schuhbeck running the company alongside the next generation. Daughter Brigitte manages sales, Julia works as a master confectioner, and son Thomas is a master baker and business economist.

Operating a bakery of this scale requires numerous industrial ovens and other electrical equipment, resulting in high electricity demand. The bakery experienced daily electricity peaks of 100kW to 150kW, which exceeded the available grid connection capacity.

Increasing the grid connection would have resulted in significantly higher infrastructure and electricity costs. The site also had solar panels installed, creating the opportunity to store locally generated renewable energy for later use.

To manage these challenges, the bakery required a solution that could:

  • Limit peak power demand from the grid
  • Enable full use of bakery equipment during busy periods
  • Store solar energy generated during the day
  • Reduce electricity costs and emissions

Dumarey deployed the PowerSkid battery energy storage system to perform peak shaving and store renewable energy.

Clean Energy Solution: Peak Shaving

The PowerSkid was installed to ensure that the bakery does not draw more than 100kW from the grid. Before installation, the bakery regularly exceeded this limit during periods of high oven usage.

The PowerSkid monitors the power drawn from the grid and automatically supplies additional power from its batteries whenever demand exceeds the set threshold. This process, known as peak shaving, ensures that grid demand remains within the connection limit while allowing all equipment to operate normally.

Clean Energy Solution: Solar Energy Storage

The PowerSkid is connected in parallel with the site’s solar panels. During the day, solar energy supplies the bakery’s daytime consumption. Any excess solar energy is automatically stored in the PowerSkid batteries rather than being exported to the grid.

This is achieved by placing the PowerSkid’s main meter between the bakery and the electrical grid and configuring the system to prevent power export.

Optimised Energy Use

The bakery’s main energy consumption occurs overnight between 23:00 and 06:00, when baking operations are most active. Because solar energy is generated during the daytime, the PowerSkid stores excess solar energy during daylight hours and discharges it overnight to support bakery operations.

To maximise solar utilisation, the PowerSkid provides a static discharge of 40kW into the bakery during night operations, alongside its peak shaving functionality. This strategy ensures that stored solar energy is used efficiently while further reducing the bakery’s reliance on grid electricity.

Results

Following installation of the PowerSkid system, the bakery was able to successfully limit its grid demand to 100kW, even during periods of high energy use. This allowed the bakery to operate all ovens simultaneously without requiring an upgrade to the grid connection.

The system also enabled the bakery to store solar energy generated during the day and use it during night-time production hours.
This combination of peak shaving and solar energy storage resulted in lower electricity costs and reduced emissions for the site. As electricity grids around the world experience increasing pressure due to electrification, solutions such as battery energy storage systems can play an important role in reducing peak demand and maximising the value of locally generated renewable energy.

The successful deployment at Der Bäcker Schuhbeck demonstrates how industrial energy storage can help businesses reduce costs while supporting the transition to cleaner energy systems.
